Government Hill's Newest Restaurant Wants You to Come As You Are

"I feel like a lot of restaurants want to filter San Antonians out because of their Mexican heritage, or because they look a certain way," Diego Galicia said about the restaurant scene he's opening into. "It's for everyone."

That's not the kind of thing you expect from the chef behind Mixtli, the restaurant that gave San Antonio its first Michelin star and the only AAA Five Diamond rating in Texas. Galicia's next project, Filleman House, is set to open on Grayson Street this fall, and he's spent the run-up to opening night talking less about tasting menus and more about who gets to walk in the door.

For anyone who already lives in Government Hill, south of Fort Sam Houston and just across Broadway from Pearl, that distinction matters more than the menu does.

What's Actually Opening on Grayson Street

Filleman House is taking over 517 E. Grayson St., the building that most recently housed Restaurant Claudine, itself the third San Antonio restaurant from the team behind Little Em's Oyster Bar and Up Scale. Before that, the 1910 bungalow belonged to August Filleman, a Swedish immigrant who settled in San Antonio, and the new restaurant carries his name.

Galicia is calling it his first solo project after years running Mixtli with cofounder Rico Torres, and the menu is a hard turn from the Mexican cuisine that earned him national attention. Expect prime rib, steak au poivre, a dry-aged burger paired with a martini at the bar, and oysters served in the garden. Beverage director Lauren Beckman, who received one of the first two Michelin Guide Texas Service Awards in 2024, is building the cocktail program. Designer Linda Romero, whose past work includes Pullman Market, Hotel Emma, Jazz, TX, and Hanzo, is handling the space itself.

The quick facts, as of the most recent reporting:

  • Address: 517 E. Grayson St., San Antonio, TX 78215
  • Targeted opening: last week of November, after Thanksgiving, pending construction
  • Hours: dinner only, Tuesday through Saturday, 5 p.m. to midnight
  • Capacity: roughly 60 guests, reservations and walk-ins both accepted
  • Reservations: through OpenTable, opening closer to the launch date

Galicia has described the house itself as part of the concept, picturing oysters on the patio and crab service in the sunroom, and he's said the space will include his own taxidermy and family photographs rather than a generic dining room look.

A Steak Dinner and a Bar Burger Under the Same Roof

The detail that stands out isn't the prime rib. It's that Galicia has gone out of his way to say the bar burger and the martini are just as much the point as the full dinner.

"You want to come to the bar and get a cocktail? You can," he said. "You want to come to the bar and have a $10 burger? You can."

That's a specific promise from a chef whose last restaurant required a reservation weeks out and a check that matched a Michelin star. Filleman House is being built so that a resident who wants a quick bar meal on a Tuesday and a couple planning an anniversary dinner can walk into the same building and both leave satisfied. For a neighborhood watching its most recognized chef move in two blocks away, that's the more useful piece of information than the wine list.

The Building's Recent History

Grayson Street hasn't been short on ambition. Restaurant Claudine opened in the same building as the third venture from a couple already running two other successful concepts in the city. Filleman House is now the next occupant, arriving with its own high-profile backing. That kind of turnover on a single address usually gets read as instability, but here it reads more like a corridor that keeps attracting operators who already have a track record elsewhere in San Antonio rather than first-time restaurateurs testing an idea.

What's Already Settled a Few Blocks Over

Government Hill isn't waiting on Filleman House to prove it can support an independent restaurant. On North IH-35, the Dortman family opened The Ridge at The Hill in a building at 2119 N. IH-35 that had previously cycled through Cervecería 88, Eastside Kitchenette, Aguascalientes Mexican Restaurant, and Treviño's Mexican American Restaurant. The Dortmans came out of La Tuna with more than three decades in the restaurant business between them, and they built an order-at-the-counter spot around burgers, beer-battered fish and chips, and sandwiches like pulled pork and torta milanesa, with live music some Friday and Saturday nights.

That address hosted four other concepts before the Ridge opened there, and the Ridge is still serving today. Filleman House, Grayson Street's answer at a very different price point, is also moving into a building with a restaurant history of its own. Government Hill's two most talked-about restaurant projects sit at opposite ends of a dinner tab, and both landed on addresses that had already tested a few other ideas first.

What Hasn't Changed

None of this touches the century-old anchors that give the neighborhood its identity regardless of who's cooking on Grayson Street this year. San Antonio's original Pig Stand, credited as the country's first drive-in, still serves its pig sandwich a few blocks away. Earl Abel's has been serving fried chicken since 1933. The Bullis House Inn, built in 1909 for Gen. John Lapham Bullis, still operates as a bed and breakfast, and Lambermont, the 1894 Romanesque Revival home built for lawyer Edwin Terrell, still hosts weddings. Whatever happens with the new openings, those four aren't going anywhere.

Across Broadway, the much larger BESA District project on GrayStreet Partners and Fulcrum Development's land is still years out, with retail openings now targeted for late 2027 and full build-out into 2028. It's worth knowing about if you're curious what's coming to the corridor eventually, but it has no bearing on what's on your table this November. And for residents doing a weekly grocery run, the gap that's been talked about locally for a while hasn't closed either. The nearest full-size grocery store is still H-E-B's Central Market, about two miles north on Broadway.

Government Hill's restaurant scene this fall isn't one story. It's a Michelin chef opening a house that serves both oysters and a $10 burger, sitting a few blocks from a counter-service spot that is already up and running on IH-35. Neither one needs the other to succeed, and neither one is waiting on the shopping center across the street.

Filleman House is targeting the last week of November, and The Ridge at The Hill is open Monday through Saturday, so a bar burger on Grayson and fish and chips on IH-35 can both go on the list. The team at Harkin Realty would love to hear where you end up eating first.
